41 Pounds of Apples and Counting

David came home with 3 1/2 5 gallon buckets of apples that he picked off a tree that was standing in one of his students front yard.  David is a special education school bus driver. It took him 10 hours to cut and core them all.  He put 3 kitchen garbage bags of apple slices in the freezer.  I had to decide what to do with them. Read on to find out what I do with them.  I have now made applesauce with 41 pounds of apples and still have more.  I started out with Keto friendly applesauce that the twins can eat, which means no sugar added.

I cooked the apples until are soft.  Then I processed in my food processor.

After processing I put them in 1/2 and 1 pint jars.

I then made sure there was nothing on the rim and placed the lids on the jars. I had a lot of jars already, so I just needed the lids.

I then placed them into a water bath.  This one below comes with the utensils that you will need too.DSC_0614

I processed for 20 minutes.  You start timing when the water starts boiling.  I then started cooking more apples.

Next I tried making some with some mixed berries.

I tried two different berry mixes I already had, strawberry blueberry, blackberry and raspberry, blueberry, blackberry. I cooked them until soft and then into the food processor.

Then into jars it goes to get processed in the water bath.DSC_0625

Next was a cinnamon applesauce.  This is the cinnamon I used.

After days of canning I ended up with 42 jars of applesauce and I still have apples left that I need to do something with.DSC_0700

Well this will be Christmas presents and a nice treat during the winter.
