Altering Recipes

I have been making Highbush Cranberry Apple Butter when we are lucky and have the berries.  We managed to get quite a few this year and I had people asking for it.  I pulled out the recipe and started making it.  It was so full of sugar and couldn’t believe it.  I thought why can’t I make this Keto friendly.DSC_0728I just made a 1/4 of the recipe because I didn’t want to waste all the berries if it didn’t turn out.

I started cooking the a pint of berries in a 1/4 cup water.  The Highbush Cranberries have a large seed in them.  You need to cook them until them are soft.DSC_0731

Next you need to strain the berries.  I have used a wire strainer with cheesecloth in it but I prefer a cone-shaped sieve.  This is the one I have.

I strained the juice into my Pyrex 4 cup measuring cup.  I have always loved these measuring cups and they last forever.  That is unless your daughters end up with them.  I had to buy new ones. These are the ones I bought.

Then back in the pot the juice goes.

I then added 1 cup of unsweetened applesauce which I made.

Next was the sugar, instead of 1 1/2 cups of sugar I used 1/4 cup of Erythritol.  This is the one I use.

I then added the spices

1/4 tsp cinnamon

a dash of clove and salt

Simmer until thick.  Remove from heat and add lemon juice from a 1/4 of a lemon and some grated rind. Spoon into hot pint or 1/2 pint jars, leaving 1/4 inch head space.  Wipe jar rims and add prepared two-piece lids.  Process for 15 minutes in a boiling water bath.

It turned out great.  I can now make more if I want too.  I will see how many berries are left after I make my Keto Friendly Cranberry Catsup.
