David came home with 3 1/2 5 gallon buckets of apples that he picked off a tree that was standing in one of his students front yard. David is a special education school bus driver. It took him 10 hours to cut and core them all. He put 3 kitchen garbage bags of apple slices in the freezer. I had to decide what to do with them. Read on to find out what I do with them. We had left over roast and I was really thinking about a roast sandwich. I looked in some of my cookbooks and found a recipe. I have to admit it is really easy to make keto bread because there is no kneading or waiting for it to rise. I mixed it together, baked it and let it cool. It was not very thick, so we actually cut it the other way to make the sandwich. It was very filling. I can’t believe I actually quit too when I was full.
Here is the recipe if you want to try it:
6 eggs (room temperature)
1/2 cup Flaxseed meal – I had flaxseeds so I just ground them
1 cup sifted coconut flour
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon apple cider vinegar
Preheat oven to 350 and grease bread pan
Mix dry ingredients together. Add eggs and vinegar mix well. Put into pan. It will be thick. Bake for 40 minutes. Remove from oven and let cool. Remove from pan and serve.
Give it a try you might like it. We did!
I was at the chiropractor today and was talking to Jen. She asked if I had read what you commented on my post yesterday. I told her I hadn’t because I had not been online all day. I was trying complete something I had started. I was trying not to go round and round. So Jen and I are talking and she is telling me get a notebook and write down everything you want to do in that day. As you mark things off you don’t look at what you didn’t get done but what you did. You start really feeling good about yourself. She had learned that at one of her other jobs and still does it. In fact, the were getting some remodeling done and she was having to do everything old school. She was writing everything down she had to do and was happily checking them off as she did them.
When we left we stopped to pick up a few groceries, a file box (for choir music), and a notebook. I started writing everything down I wanted to accomplish today. I didn’t get everything done but I did make a dent which made me feel great. This is going to be another one of my life changing moves. I hope I keep it up because I think it is the best idea I had heard in a long time. So Thank You, Jen!
For those of you that are falling my diet I just want to say I am still doing good. I still have not minded this Keto diet at all so far. We will see how I feel in a month, but I will keep you posted. We are going camping this weekend and I am making cauliflower salad, which is like potato salad but with cauliflower instead of potato. It is really good. We can eat that with our sausages cooked over the fire one night. The next night we will have some nice steaks. I haven’t decided about breakfast but I am sure it will be some kind of eggs, until I can figure out different things to eat.
I am now going to go and check off my blogging on my list!
I guess I forgot to post this one. Oh well, better late than never like they say.
Imagine waking up to the sound of running water and the birds talking. I love waking up this way. Sitting around a morning fire drinking coffee. This is the life for me.
We have been walking the 4 wheeler trails around our camp. I even crossed creeks with one coming almost to my knees. It was cold and helped my heel feel better. I have taken a few shots but will upload the ones from the camera when we get home.
It is so peaceful here. I really enjoy camping. We have gotten older and sleep in a camper. These old hips don’t do ground sleeping any more. Besides you should see me getting up off the ground when you can’t use your knees. Get that butt up in the a and get off the ground.
As far as the diet goes we are sticking to it pretty good. We might be going over on the beer. But what is camping if not beer around the campfire at night. I am cooking lamb chops over the fire tonight and we are having cauliflower salad too.
Even the Flat Ole Hippies came with us.
Well the twins are bringing Mom and Dad out but they had to go to a wedding first. We are going to start the fire, so I can cook, and I am going to say bye for now. I get to check my list now.
Well today I went out to help Dan to pick up their 17′ travel trailer. They were supposed to pick it up yesterday but they didn’t have the stuff it get the van ready, so they asked if they had the stuff to get the truck ready. They said yes and to bring the truck in today. Then since that was only going to take an hour and half we could drop the van off when it was done. It had to be fixed at another shop and they would fix it tomorrow. This means the kids could still go camping this weekend. This was our plan for the day.
Now what happened today went a little different. I drove out to Eagle River where Heather and Dan live. I watched the girls while Dan worked on truck. I got there at 10. While I played with the girls Dan got the hitch put back on the truck, I am not just talking about the ball.
Next we loaded the girls in the van around 12:30 to drop the truck off. I drove my old van to town while Dan drove his truck.
We dropped the truck off and figured we would go to lunch. After lunch we still didn’t hear from ABC RV, so decided to go garage selling. Grandma needed toys for the girls when they were at her house. I only found one toy. It was a wooden logging truck. What little girl wouldn’t want a logging truck.
Dan and I found a toy for us but Heather said no. It was Unimog. I didn’t no what it was but I thought it looked really cool. I wanted to drive it. I used to love to drive our skidder.
Anyway now it is 5 and the girls were hungry, so we headed back to check on the truck. They still didn’t have the truck ready. We got the girls feed but still haven’t got the van dropped off. I told Dan that we would do it tomorrow for them, so they could still go camping. Finally they said it was ready. I took the van to our place and Dan came to pick me up, so I could get my car at their place. When I got home Dan called to say the truck still wasn’t ready but would be soon. He finally made it with trailer in tow.
Dan and Dusty went to put the car seats in the back seat. Now his truck is a 1987 and if you can remember how small the backseats are in them. They had to move the seat all the way up and still couldn’t quite get the back of the seat all the way back. Then you put a 6’2 man behind the steering wheel and it is pretty funny. Dan looks like he is driving some little car with his knees under his chin.
We arrive at their house and I go in to talk with Heather. Dan walks in and tells her you need to see something. He shows her how close the seat is to the steering wheel and her reply was you want me to drive. With her only being 5′, we don’t really think she is that tall, she thought the seat looked just right. We headed home leaving them to pack their trailer and head out. I am not sure who drove.
As for our 5th day of Keto it went good. Had a shake for breakfast and at lunch I ate brisket, collard green, and coleslaw. That was my first time eating out and it was easy to find food I could eat.
I came home and what I had planned to cook was Beef Storganof with cabbage instead of noodles. It was supposed to be cooked in the slow cooker which I had forgot. When I get home I was trying to figure out what to cook. Then I think why can’t I cook it in my express pot. Well I found out I could.
It was really good and I will make this again.
Well I guess the vacation or holiday whatever you choose to call it is over now. We had to start getting back to normal. Went grocery shopping, since there was not much in the house. Started washing the clothes from the trip with the help of my sweet husband. Decided what to cook for supper because the two men here think they should be fed. Started working on articles for which I have a tons of ideas for many stories. Starting with the brewery in Girdwood because I told them I would write theirs when I got home.
Dusty got the no running water in the camper problem fixed. He also figured out why we had no turn signals or brake lights which we found out while camping. It was a fuse under the hood, so that was an easy fix.
I have got the packages ready to mail outside or the lower 48 other people would say, with things I brought back for my family down there.
Supper is almost done and the boys went to look at a used generator for the camper. Things are looking good. Oh damn, I forgot about the laundry again. Guess I better go get the stuff out of the dryer and put the last load in the dryer.
Well clothes are dry and next load in to dry. Boys came home with generator in hand which David was very happy with. Supper is going to be served now and we can settle in for the night. Hopefully, a movie to relax by.
